The Starving Chef Recipe: Caramel Apple Crisp Cheesecake

I was really craving an apple crisp and decided what better way to eat it than on a delicious cheesecake? 

With a savory cheesecake base infused with ginger and brown sugar, the apple crisp crust and topping really propel this dessert to a whole new level of amazing.

Caramel Apple Crisp Cheesecake

Prep time: 15 minutes
Cook time: 45-50 minutes
Makes: 8-10 servings

For the Crust
1 C graham flour
3/4 C rolled oats
1/4 C brown sugar
1 C melted butter

For the Brown Sugar Ginger Cheesecake Filling
16 oz. cream cheese, room temperature
1/4 C brown sugar
1/4 C white sugar
2 T cornstarch
1 t vanilla
1/4 t ginger, minced finely
Dash cinnamon

For the Apple Crisp Topping
3 apples, sliced thin
1/2 C rolled oats
1/4 C graham flour
1/4 C brown sugar
3 T melted butter
Dash cinnamon
1 C caramel topping

Here’s How:
  1. Preheat the oven to 375 F. In a large bowl, whisk together the ingredients for the crust. Continue to stir until the oats have soaked up a good bit of the moisture and a crumbly dough forms.
  2. Press the crumbly dough into the bottom of the pan until it is an even layer. Bake for five to eight minutes, until the crust is just beginning to look dry.
  3. In a medium bowl, beat together cheesecake ingredients. Use a hand mixer until creamy and completely combined.
  4. Spread the cheesecake mixture on top of the baked crust. Arrange the sliced apples in overlapping layers until the cheesecake is totally covered.
  5. In a small bowl, whisk together the oats, graham flour, brown sugar and cinnamon for the apple crisp topping. Stir in the melted butter until crumbly. Spread the crumbles across the apples.
  6. Bake for 45-50 minutes, until the top layer has crisped up. Turn off the oven but leave the cheesecake in the oven until the oven is entirely cool. Cover the cheesecake and chill for 24 hours.
  7. When ready to serve, heat up the caramel sauce until it pours easily. Drizzle or spread the caramel sauce across the top of the apple crisp until the top of the cheesecake is covered to your preference.
