Enjoy a refreshing twist on pasta salad, featuring seared halloumi, dill and crisp vegetables, perfect for picnics or a light, flavorful lunch.

Dill Pickle Pasta Salad

Prep time: 30 minutes
Chill time: 1 hour
Makes 2 servings

Ingredients

2 C bowtie pasta, cooked and cooled
½ C mayonnaise
2 T white vinegar
3 T dill, chopped
4 baby carrots, chopped
¼ C halloumi, cubed and seared
4 dill pickle slices, chopped
2 T tomatoes, chopped
2 T fresh parsley, chopped
Pinch of salt

Here’s How

  1. Cook pasta according to package instructions. Drain and rinse under cold water until cool. Set aside.
  2. In a pan over medium-high heat, sear halloumi cubes until golden brown, about 5-10 minutes. Remove from heat.
  3. In a small bowl, combine mayonnaise, white vinegar, chopped dill and a pinch of salt to create the dressing.
  4. In a large mixing bowl, add the cooled pasta. Pour the dressing over the pasta, stirring to coat evenly.
  5. Add the chopped carrots, dill pickles, seared halloumi and chopped tomatoes to the pasta. Mix well.
  6. Adjust seasoning with additional salt if necessary.
  7. Chill the salad for at least one hour to allow flavors to meld, or serve immediately if preferred.
  8. Before serving, garnish with fresh parsley for an added burst of flavor.
