The Starving Chef Recipe: Peach Bourbon Baked Beans

These baked beans are the essence of Southern flavors. With a bit of bite from the whiskey and a twang of sweetness from the peaches, if you’ve ever wanted to bring some Southern charm to your cooking, then this recipe is for you.

Peach Bourbon Baked Beans

Prep time: 30 minutes
Cook time: 1 hour
Serves: 8

Ingredients

32 oz Great Northern beans, drained
3 slices bacon, cooked until crispy and crumbled
1 jalapeno, finely chopped
½ C red onion, finely chopped
12 oz peach preserves
¼ C bourbon or whiskey
¾ C chicken broth
2 t dry mustard
1 T minced garlic
1 T apple cider vinegar
Salt and pepper, to taste

Here’s How
  1. In a Dutch oven over medium-high heat, cook the bacon until crispy. Remove the bacon and set it aside on paper towels to cool. Once cooled, crumble the bacon.
  2. Leave the bacon grease in the pot and add the chopped jalapeno and red onion. Sauté for about 5 minutes, until the vegetables are tender.
  3. Stir in the drained beans, peach preserves, and bourbon. Stir until the preserves have melted into the beans. Then add the dry mustard, minced garlic and apple cider vinegar. Season with salt and pepper to taste.
  4. Pour in the chicken broth and bring the liquid to a rolling simmer. Allow the liquid to reduce by half over a period of about 30 minutes.
  5. Cover the beans and reduce the temperature to medium-low. Let the beans simmer for an additional hour, or until they are fully cooked through and tender. Serve warm and enjoy.
