Take a taste of the tart and sweet notes of this delicious campfire delight— caramelized pineapple shortcakes with a sweet, sugary glaze.

Pineapple Bonfire Cakes

Prep time: 5 minutes
Cook time: 10-15 minutes
Makes 3 cakes

Ingredients

3 vanilla shortcakes
3 maraschino cherries
3 pineapple rings
6 T brown sugar

Here’s How
  1. Preheat Grill: Begin by preheating a cast iron grill over an open fire for at least 1 hour, or alternatively, prepare to use the hot coals of a dying fire.
  2. Prepare Foil and Ingredients: Lay out an 8x8-inch piece of foil and spread 1 T of brown sugar into an even, 3-inch round layer in the center. Place a cherry in the center and surround it with a pineapple ring. Top the pineapple with another 1 T of brown sugar.
  3. Assemble Shortcake: Place a shortcake, open side down, on top of the pineapple ring, then loosely wrap the foil around the cake. For direct coal baking, tightly wrap with double foil layers. Repeat for each shortcake.
  4. Bake: Place the cakes pineapple side down on the grill or directly in the coals. Bake for 10-15 minutes until the brown sugar melts and the pineapple begins to caramelize.
  5. Serve: Carefully remove the cakes from the fire. Arrange them pineapple side down on a plate, open the foil from the bottom, and quickly flip over with another plate. Remove the foil gently, allowing any sugar to drip onto the cakes.
