Savor the perfect meld of creamy avocado, hearty turkey and tangy roasted red peppers in this deliciously grilled provolone cheese panini.

Turkey, Avocado and Roasted Red Pepper Panini

Prep time: 10 minutes
Cook time: 10 minutes
Makes 2 sandwiches

Ingredients

4 slices thick-cut sourdough bread
8 oz. sliced turkey meat
1 avocado, sliced
¼ C roasted red peppers, drained
2 T pesto
4 slices provolone cheese
Pickles, for serving

Here’s How
  1. Preheat panini press on high.
  2. Build the sandwich: On one slice of bread, layer two slices of provolone, a 1/4 pound of turkey, avocado slices and roasted red peppers.
  3. Spread pesto on another slice of bread and top the sandwich.
  4. Grill in the panini press until cheese melts and sandwich is hot, about 8-10 minutes.
  5. Serve hot with pickles on the side.
